If it is simply the VSWR of an antenna, then no problem. It is not at all necessary to have all antennas active to determine any interference effect as long as the swtiching can be set to a state that allows all the paths to be measured, presuming the antennas are not acting non-linear. But it may require you to do some math on the results to determine the specific characteristics that you want to see.
This is similar to the problem of differential measurments, on passive devices, which has been clearly demonstrated to be able to make all the needed measurements stimulating one port at a time and properly combining the results.
